Palmitos

This miniature palm, with its perfect fan-shaped leaves, is indigenous to the south-east corner of Spain. It is one of many varieties of palm tree which is used to make "hearts of palm", the principal ingredient of millionaire's salad. The salad is expensive because each palm tree can only contribute one "heart" - and to get at it, you have to fell the tree!

The trees in this photo library were growing in a Spanish national park where they are protected from such depredations. Indeed, the palmito tree is the chosen emblem of the Parque Nacional de Cabo de Gata, in the south-eastern corner of Spain.
